Let's get the science info out of the way first! Fermentation is a metabolic process where microorganisms (like yeast and bacteria) break down carbohydrates into simpler substances, such as acids, gases, or alcohol, in the absence of oxygen. This ancient biotechnology is used to produce a wide array of foods, beverages, and industrial products, and also occurs in the human body.
Why are we interested in fermentation? Fermentation helps to preserve food, enhances its flavor and texture, and can make it more nutritious and digestible.
In this class, we will work through the basics of fermentation and talk about the methods for fermentation for home food preservation. We will discuss preparation, safety, and how to use fresh vegetables for maximum gut health and taste.
The class will be held at 624 Cherokee in Downtown Leavenworth. Tickets need to be purchased in advance.
Each participant will receive:
- Container for food preservation
- Proper tools for fermentation including airlock and glass fermentation weight
- Class Materials
